Steaming or boiling sweet potato is a quick and easy way to add this healthy carbohydrate to meals. Boil sweet potato: Add peeled and chopped sweet potato to a pot of lightly salted water. Bring to a boil then reduce heat to simmer for 15-20 mins, until tender when poked with a fork. Will store in the fridge in a tightly sealed container for 3 days. In the past I have been known to accidentally slice a finger or two while in the kitchen. Being left-handed and can be clumsy with my knife skills, I definitely have to take my time and be more careful when chopping to prepare a meal. As we are getting into the routine with back to school, granola was on the list for a healthy snack that is easy to prepare in a big batch.
